Bob will lead sales for us in E. Washington and Idaho ... while Sue Kelly, his wife, heads up Montana and portions of Wyoming and Utah. (Yes, they are Road Warriors Supreme.) They will cover some of the most naturally beautiful parts of this country. Consider them your "Team Bulkley" in these regions. Bob has been repping in the Housewares industry for a couple of years now and in 2011 he and Sue (who was already with us) come exclusively to Bulkley Associates. Salsa Couscous Chicken
3 cups cooked couscous or rice
1 Tbsp. oil
¼ cup chopped almonds
2 cloves garlic, chopped
8 chicken thighs
1 cup salsa
¼ cup water
½ cup raisins
1 Tbsp. honey
2 teas cumin
1 teas cinnamon
I like to use my Le Crueset 3-1/2 qt braising pan.
Brown almonds in oil and take out. Add garlic and chicken, searing 4-5 minutes.
Combine all remaining ingredients, mix well and add to chicken.
Reduce heat to medium-low and cook for 30 – 45 minutes, stirring occasionally.
Serve over warm couscous or rice and sprinkle with almonds.
